Waffles are just pancakes with abs, so they’re better for you right? 😉 Well, these are! OK maybe not quite for that reason, but every ingredient in this recipe is good for you. I like to used a plant-based protein powder because (1) I don’t eat dairy, which means I don’t consume whey or casein protein powders and (2) plant-based protein has a more flour-like consistency, making it a perfect substitute for the flour in baked goods. Kept mine simple this morning, with just a bit of honey and dark chocolate chips, but go ahead and get creative with it!
Ingredients
1/2 cup (usually ~ 2 scoops) vanilla plant-based protein powder (I like Garden of Life)
1 banana, mashed
1 tbsp almond milk, unsweetened
1/2 cup egg whites
1/2 tsp baking powder
Toppings
1/4 cup dark chocolate chips, dairy-free (I like Enjoy Life Foods)
1 tbsp honey, maple syrup, or agave
Instructions
1. Allow waffle maker to heat up completely.
2. In a small bowl, mash the banana with your almond milk. Gradually stir in remaining ingredients. You may also use a blender for this step.
3. Spray waffle maker with cooking spray and pour in batter. Cook according to waffle maker instructions, until done.
4. Serve with your choice of toppings. I love fresh fruit, dark chocolate chips and a drizzle of honey!
