{gluten-free, dairy-free, vegan}

Ingredients:
- Cooking spray (I like this one)
- 1/4 cup gluten free all purpose flour (I like Bobs Red Mill 1-to-1 Baking Flour)
- 1/4 cup sugar (I use organic cane sugar)
- 1/8 teaspoon baking soda
- 1/8 teaspoon salt
- 4 Tablespoons almond or coconut milk
- 2 Tablespoons oil (I used avocado oil)
- 1/4 teaspoon vanilla extract
- Small handful (2-3 tablespoons) of chocolate chips (I use dairy-free chocolate chips)
Instructions:
- Spray a microwave-safe mug with cooking spray
- Put all ingredients into mug and stir well
- Cook in microwave for about 1 minute and 30 seconds. I like to cook in 30-second intervals so that I can check to make sure it’s not overdone.
- Let cool for about a minute. Enjoy!
